Singaporean-Italian fusion dishes at the Singapore signature food challenge
SINGAPORE – March 30, 2015, Monday – Perhaps in the very near future, you would be enjoying salted yolk crab tortellini and carrot cake frittata in a local hawker centre.
A frittata is an Italian dish similar to an omelette, while tortellini are Italian ring-shaped pasta stuffed with meat or cheese.
These Singaporean-Italian fusion dishes created by Temasek Polytechnic students Daren Teo and Tien Jia Chen won the top honours in the Singapore Signature Food Challenge, held at ITE College West (Choa Chu Kang) on Saturday March 21. At the culinary competition, 15 teams of students from tertiary institutions here tried their hands at creating various well-loved local hawker dishes and also their own modern interpretations.
Fusion local delights
The duo was elated at their unexpected win. “When we created the modern interpretations, we didn’t want to change the flavours so much, maybe just have a different way of presenting the dishes. Why change something that is already so good?
“So for our carrot cake, the flavour and ingredients remained the same, like chai poh (Chinese dried radish) and egg. We used Western techniques, for instance, instead of frying the egg, we made an omelette. Similarly, we cooked the crab the same way but presented it in the Italian tortellini.”
Quality food comes from quality ingredients
As part of the competition rules, all teams must use at least two of the 10 food products sponsored by Unilever Food Solutions (UFS), which was one of the supporters for the competition. The products are Knorr Golden Salted Egg Powder, Knorr Rock Sugar Honey Sauce, Knorr Tom Yam Paste, Knorr Lime Seasoning Powder, Knorr Concentrated Chicken Powder, Knorr Basic Stock Reduction, Knorr Pronto Tomato, Knorr Mashed Potato, Best Foods Real Mayonnaise and Planta Margarine.

World Street Food Congress 2015
Daren and Jia Chen have won the opportunity to showcase their winning dishes at the World Street Food Congress 2015, which will be held at the field opposite Tan Quee Lan Street from April 8 to 12. There, they will hold court with other chefs from 12 cities around the world.
The National Heritage Board will also showcase 50 signature Singaporean dishes.
About the Singapore signature food challenge
The Singapore Signature Food Challenge for aspiring culinary talents aged 17 to 23 years old, organised in celebration of SG50, aimed to highlight local cuisine from all ethnic groups. It was supported by the Singapore Chef Association, Makansutra as well as Unilever Food Solutions, and attended by guest-of-honour Ms Low Yen Ling, the Mayor of South West CDC.
The panel of judges included Mr KF Seetoh, chief executive of Makansutra; Mr Edmund Toh, president of the Singapore Chef Association; as well as Chef Yen Koh, culinary advisor at Unilever Food Solutions.
Chef Yen shared on what impressed him most about the winning dishes: “Their creations tasted good, but on top of it, they were able to marry wonderfully two types of cuisines that Singaporeans adore: local and Italian.”
